Autumn Spice Cookies
Happy Autumn!
A few days ago I had the most fun little fall party with my friends. We painted pumpkins and ate yummy foods. One of the things I made were these Autumn Spice Cookies. Everyone loved them, so I thought I would share the recipe! This is Amy Hannon, Euna Maes recipe and it’s a good one! Please share if you make them!
Ingredients:
1 box spice cake mix
1/3 vegetable oil
2 large eggs, room temp
1 tsp vanilla
1/3 cup granulated sugar
1 scant teaspoon cinnamon
1/8 teaspoon ginger
1/8 teaspoon nutmeg
1/3 cup powered sugar
Instructions:
Preheat oven to 350 degrees. Mix together the cake mix, oil, eggs and vanilla; chill for 30 minutes. In a shallow bowl, whisk together the granulated sugar, cinnamon, ginger and nutmeg. In a separate bowl, whisk and powdered sugar to remove clumps. Use a 1 1/2 T scoop, and scoop into balls. Roll each ball in cinnamon sugar then coat in powdered sugar. Place cookie dough balls 2” apart on a parchment-lined sheet pan and bake 11-12 minutes or until puffed up, split on top and no longer wet-looking on the top. Drop the sheet pan on the counter several times right out of the oven to settle cookies. Let cool 5 minutes before moving to a cooling rack. Allow to cool entirely before eating.
