Chicken Tortilla Soup

Hi y’all,

Eeeek, fall is just the best isn’t it? I love the changing of the leaves, the crisp air and all the yummy warm meals in the making… this is one of my favorites!!

Last fall I think I made this soup every other week, I just love it so much! We’ve already made it once this year and it just reminded me how yummy and easy it is!

Ingredients:

  • 1 to 1 1/2 lbs. of diced chicken breast

    • Ground beef also works if you want to change the recipe to taco soup!

  • 1 can of pinto beans

  • 1 can kidney beans

  • 1 can of yellow corn

  • 1 can diced Rotel tomatoes (we get hot to make it a lil spicer)

  • 1 (15oz.) can tomato sauce

  • 1 (16oz.) can diced tomatoes, Hunts Roasted Garlic or regular

    • You can substitute with 1 1/2 cups water

  • 1 pkg. taco seasoning

  • 1 pkg. DRY Hidden Valley Ranch Dressing mix

  • 1 chopped onion

Instructions:

  • Do not drain vegetables. Add all of the above ingredients to the cooked meat. Simmer 30 minutes. I love to top mine homemade baked tortilla strips, cheese, and avocado. Also amazing with cornbread!
